“I recently purchased a 2027 Chevy Bolt RS base trim and I’m really impressed with the build quality and overall design—GM did a great job. I’m gradually getting used to the built-in Google system, but I was disappointed to learn that Apple CarPlay and Android Auto are no longer supported.


It also looks like GM plans to make the Google system subscription-based after eight years, which is concerning. Has anyone else run into issues or frustrations with the new infotainment setup? I’d love to hear how other owners are adapting.”
 
This is the same infotainment system in most GM ultium EVs (Cadillac Lyriq might be the exxception) which is based on google AAOS.
The big advantage...is you forget your phone you still have google maps and other apps.
Therefore some of us who don't care about carplay or android auto find the aaos in the car infotainment reasonable...we have 8 years (still have 6 years as i have the blazerEV for 2 years now) of google maps and assistant etc and yes when the time comes ...i'll most probably use my phone hotspot to make the car connect and google maps work.
I like that i can talk to it to change cabin temperature or start seat heating etc...
You can tell it to route you to a DCFC and it will automatically start preconditioning the battery on the way there.
I believe the AAOS system has more connection to the car hardware than carplay could...e.g the google map estimate of SoC at destination is pretty good...especially as you drive it adjusts on how many kW you are consuming (which is dependent on how fast, temperature, wind etc)

Some people who cannot live without their apple environment have been buying a $200 usb hardware to make carplay work on the infotainment
