Go to tirerack.com or discount tire direct.com and use their "search by vehicle" and you will get a list of aftermarket wheels that would fit the SE. You can see the specs of each wheel like bolt pattern and offset and weight and such. As for the jack, get a low profile racing jack that's designed to be used for race cars that are lowered.
5x112 is also used by VW but with a too small and a mini sized centre bore. Mercedes use 5x112 and the same centre bore, but offset varies enormously between models. Some older cars also used 12mm bolts, so the holes are likely too small. I bought some German aftermarket wheels that are an exact Mini fit. My horror fright 3t jack works just fine on my SE. The R53 is the pain, I have to drive that onto 1" blocks
I put 1” casters under the arms of my QuickJack frames but haven’t tried them under the MINI since. They’re nominally 3” but the casters add about ¾”, plus the rubber blocks…
