I live on wet salty Long Island. I periodically have to do the Neutral trick to clean my rotors. Do any of the service intervals address the rotors specifically ?

What does the service schedule in your owners manual say?

Mine says inspect rotors and pads every 12 months/15,000km. But I don't live in a salty environment so yours might be different.
 
Here are my rotors at 50 thousand kilometers behind them:

Front:

Rear are definitely under-utilized and need some more "manual" breaking by shifting to Neutral to clean up the accumulation of rust.
 
The only part of the brake system you need to worry about rusting is the parking brake, which you should use all the time to keep it moving and functional.
