Another option would be to put the phone you don't want to connect into airplane mode, then the car would only see one phone.

If you have both phones set up and only one of you uses the SE it should connect automatically, right? As far as I know the only option is first-come-first serve with CarPlay, so whoever gets into the car first gets connected. I don't think you have to manually select an alternate phone from the list.
This is correct, and seems to be pretty standard when using CarPlay; my spouse and I see the exact same behavior on our EV6 using an OttoCast wireless CP adapter. Since the initial connection is via Bluetooth, it really depends on who is closest to the vehicle followed by who the previous driver was; if you are both within range, it will consistently connect to the previous driver.
I’ve learned over time that the easiest way to ensure the connection is made when switching drivers is to have the new driver get in the car first when the Bluetooth signal from the prior driver is non-existent (either distance, obstructions, or Airplane Mode block the signal), start the car, and connect to CarPlay. Once that initial connection is made, CarPlay will consistently connect to that driver until the next time drivers change.
