The steering "yoke" (actually, it's just a partial steering wheel - missing about 25%) is, perhaps, the most contentious aspect of Aptera's design.
Here's a brief clip of Aptera's CEO, Chris Anthony, speaking with Fully Charged's Jack Scarlett, that should put an end to the "yoke FUD" and fear of "hand-over-hand" difficulties...
