This goal makes me wonder if Gemini will be missing anything Artemis has to get it down to the planned production weight? How much heavier is Artemis than the planned production weight?

Nothing official, but some have suggested it's several hundred pounds different due to "one-off" simulated production parts such as machined rather than cast frame and suspension components, steel replicas of eventually-aluminum components, 3D printed plastic parts, etc. Matching production weight means that range and handling tests can produce "official" results, but crash testing will require vehicles made with actual production methods and materials.
 
If you watch the Artemis Reveal video you'll see an example of simulated parts - the foam "bumpers" on the front wheel pants and the rear corners of the vehicle are obviously NOT made of the "Crocs-style" foam they will eventually be: In direct sunlight you can see the strata lines that are the telltale sign of 3D printing.
